All our food is cooked using traditional Scottish cooking methods. This means meats are cooked in Whisky, Red Wine (not cooking wine), Local Port Sherry and Craft beer. Some gravies also contain wine & whisky for flavour. Alcohol burns off at 78°C, so the alcohol is completely burnt off during cooking for everything. We cannot change this.
